Queso Blanco Dip (White Cheese Dip)
Ingredients:
- 1 1/4 lb block of White American Cheese cut into cubes (from deli)
- 1/4 cup diced green chiles
- 2 pickled jalapenos, chopped
- 1 ounce pickled jalapeno juice
- 2/3 cup whole milk
- 1/2 cup cold water
- pinch of cumin
- kosher salt to taste
or
- 1 tablespoon oil
- 3/4 cup onion, diced
- 1/2 cup poblano pepper, diced
- 1/4 cup red pepper, diced
- 1 jalapeño, seeded and diced
- 1/2 cup milk
- 8 ounces grated white cheddar
- 8 ounces grated habanero or pepper jack cheese
- 4 dashes of Tabasco
- Salt & Pepper
- Tortilla chips
Directions:
- Microwave all ingredients on high, 1 minute at a time, for 5-6 minutes, until smooth. Stir after each minute. Serve hot with chips and/or raw veggies.
- Saute onion, poblano pepper, red pepper, and jalapeño. Sprinkle with salt and pepper about 5 minutes.
- Turn the heat down to medium-low and stir in the milk. Bring the milk to a simmer (hot but not boiling). Slowly whisk in the cheese.
- Add Tabasco and salt and pepper to taste.
- Serve immediately with tortilla chips or transfer to a Crockpot set on low to keep warm.
